2 garlic cloves

1 lemon, juice & zest

2 tsp Dijon mustard

½ cup keto mayonnaise

3 anchovy fillets

Description

This Caesar salad dressing has become a staple in our fridge. I make it practically every week and the whole family helps themselves to it. 


Obviously it's great for a Caesar salad but it's also perfect for burgers and in wraps. 


It really is delicious and it's sugar free and dairy free.


Now, it does have anchovy fillets in it. Even if you aren't an anchovy lover, I really recommend trying it before you omit them. They really make this dressing and the anchovy haters in my family haven't even noticed. 


Once made, you can store this in an airtight jar in the fridge. I'd recommend using it within 5-7 days. 

Instructions

Conventional Method

  1. Add all dressing ingredients to a blender and blend until smooth.

  2. Transfer to an airtight container and keep in the fridge.


Thermomix Method

  1. Place garlic in Thermomix bowl and chop for 3 sec/sp7.

  2. Add remaining dressing ingredients and blend for 10 sec/sp5. Scrape down the sides and repeat.

  3. Transfer to an airtight container and keep in the fridge.
