Ingredients

  • 1 tbsp extra virgin olive oil

  • 300g cauliflower, broken into florets

  • 2 cloves garlic

  • 1/4 tsp ground turmeric

  • 1/8 tsp cracked pepper

  • 1/4 cup tahini

  • 3 tbsp lemon juice

  • 1/4 tsp ground cumin

  • 1/4 tsp ground coriander

  • Salt to taste

Description

This Cauliflower Hummus has to be one of my most favourite creations. I just love it. 


I enjoy it with keto crackers or as a side with meals. It's delicious with tabouli as a side to chicken, steak or lamb. Your options are endless with this one!


I also take this to BBQ's as a side with tabouli on top. It looks so colourful and everyone enjoys it. 

Instructions

Conventional Method

  1. Preheat the oven to 200° and line a tray with baking paper.

  2. Combine oil, cauliflower, turmeric and pepper on a tray and toss until the cauliflower is coated well.

  3. Bake in the oven for 30 mins.

  4. After the first 10 mins, add the garlic cloves to the cauliflower.

  5. Once the cauliflower is cooked, blend cauliflower mix and the remaining ingredients using a food

  6. processor until smooth.


Thermomix Method

  1. Preheat the oven to 200° and line a tray with baking paper.

  2. Combine oil, cauliflower, turmeric and pepper on a tray and toss until the cauliflower is coated well.

  3. Bake in the oven for 30 mins.

  4. After the first 10 mins, add the garlic cloves to the cauliflower.

  5. Once the cauliflower is cooked, blend cauliflower mix and the remaining ingredients in the Thermomix bowl for 30 sec/sp4.
