Ingredients

  • 350g turnip, ends cut off and thinly sliced

  • 100g shortcut bacon, diced

  • ¼ onion, thinly sliced

  • 250g cream

  • ½ cube chicken stock

  • ½ tsp dijon mustard

  • ¼ tsp ground paprika

  • ¼ tsp xanthan gum

  • 50g cheese, grated

Description

Back when I was a carb lover, a potato bake was my favourite side for any type of meat. I just loved that rich, creamy comfort food! Obviously potato bake is not keto friendly but I have found the next best thing...turnip bake. 


Now, hear me out. A lot of people think turnips are only good for soup, but they are not. Turnips fit with keto as they are around 4.6g net carbs per 100g. They are also loaded with vitamins and minerals, and are a good source of omega-3 fatty acids. They are great as a bake, or even as fries


I often make this for myself, leave it in the fridge for a few days and just reheat a portion as needed. It goes with practically any meat - steak, chicken or a good roast pork belly. 


I have made this pretty much exactly as I made potato bake in the past. I love the layers of onion and bake throughout the bake as they add delicious flavour. Of course, you can omit these if you like. 


If you would like a dairy free version, replace the cream with coconut cream and add 3 tbsp nutritional yeast flakes for some cheesy flavour. Omit the grated cheese on top. 

Instructions

Conventional Method

  1. Preheat the oven to 180°

  2. Layer the turnip, bacon & onion in a small casserole dish. Repeat until all ingredients have been used.

  3. Combine the cream, stock, mustard, paprika and xanthan gum in a small saucepan over low – medium heat for 5 mins. Then pour over the turnip.

  4. Sprinkle cheese over the top.

  5. Place the dish in the oven and cook for 40 mins. Keep an eye on the bake while cooking. Once the top is melted and golden, cover with foil so it doesn't burn.

  6. Remove from the oven and serve while hot.


Thermomix Method

  1. Preheat the oven to 180°

  2. Layer the turnip, bacon & onion in a small casserole dish. Repeat until all ingredients have been used.

  3. Place the cream, stock, mustard, paprika and xanthan gum in the Thermomix bowl and cook for 3 mins/80°/sp2. Then pour over the turnip.

  4. Continue from step 4 above.
